2 1/2 lb. fresh pork loin
12 garlic cloves peeled and crushed
1/2 lg. Onion chopped, 1/2 cup sour orange juice
1/2 cup pure Spanish Olive Oil
1/2 tsp. salt, Oil for deep frying
1/2 fresh onion, sliced into rings
4 lime wedges on rind

Cut pork in 2 in. chunks removing most fat. To prep marinate; mix 3/4 of the garlic, with all the chopped onion, juice, olive oil and salt. Pour marinade over pork chunks, set several hours or overnite in fridge. Remove meat from marinate and deep fry in cooking oil until well done. Drain and garnish with fresh onion slices, remaining garlic in a little olive oil and lime wedges.

I Love Masas de Puerco. I still have it often at the Capa De Villa Terresita restaurant in Tampa. Its yummy with yucca en Ajo and sweet Plantains.
