12 large button mushrooms, 3 to 4 whole Quail or other small game bird cooked and deboned, 1 c shredded cheddar or Colby cheese, 1 serrano or jalapeño pepper seeded, salt & pepper to taste, 2 bacon strips cooked and crumbled

Directions:
Directions:
Remove stems from mushrooms and discard, in a food processor combine the meat from the quail, cheese, serrano, salt and pepper. cover and pulse until finely chopped. stuff mushroom caps with mixture and sprinkle with bacon. place on baking sheet and bake at 400º for 10 to 15 min or until cheese is melted.
