1-2 lbs. chicken breast
1-2 cups flour
approx. 3 eggs
1 cup grated Parmesan
1 cup Italian seasoned bread crumbs
salt & pepper to taste
canola oil
1 jar tomato sauce
2 cups grated mozzarella
Directions:
Directions:
Put flour in 1 bowl. Whip the eggs in a separate bowl. In a 3rd bowl combine the Parmesan, bread crumbs, salt & pepper. Begin to heat the oil in a frying pan. It needs to be half as deep as the thickest chicken breast. Watch that it doesn't get so hot that it smokes.Wash and trim chicken. Coat with flour to dry. Dip in egg. Coat with bread crumb/cheese mixture. Fry until golden brown. Be sure to double check that the middle is cooked through. If it's not, turn down the heat. Drain on paper towel. Once all of the chicken is cooked, arrange in a 9 x 11 pan and top with tomato sauce, mozzarella and a little Parmesan. Bake at 350º for 20-30 minutes to warm sauce and melt cheese (or cover with foil then plastic and place in freezer for another night).

When we lived in Boston, I hired a "doula" to help me through the first 2 weeks home with our 3rd son. She did such wonderful things as put away toys, wash and fold clothes, and cook dinner. We never wanted her to leave after she made this recipe! Warning: keep Uncle Billy away if you want any for yourself!
