2 cups sugar, 1 1/2 cups veg. oil, 4 eggs
2 tsp. baking powder, 1 tsp. baking soda
1 tsp. salt, 2 tsp. cinnamon, 2 cups flour
3 cups grated carrots, 1 1/2 cups chopped pecans or walnuts.

Directions:

Cream first 3 ingred. in 3qt bowl. Sift next 5 ingred.
Pour sifted dry ingred. into bowl. Mix well ! Fold in last 2 ingred. Grease & flour 8" Tube pan
Preheat 300º Bake 60 minutes Test w/ butter knife.
If it comes out dry it's done! This recipe is moist, so don't be fooled by oil droplets on knife. Frost
with Cream cheese Frosting...
