1 cup chopped onion
1 cup chopped bell pepper, any color
2 tsp. chopped garlic
1 1/2 tsp. dried thyme
1/2 tsp. crushed red pepper
1 tbs. olive oil
1 cup rice
1 can rotel tomatoes with chilies
1 15 oz can black beans, drained and rinsed
2 cups water
1 tbs cider vinegar
salt and pepper to taste


Directions:
Directions:
Saute onion, bell pepper, garlic, cumin, thyme, crushed red pepper in olive oil until onion is tender, about 5 minutes. Stir in remaining ingredients. Heat to boiling. Reduce heat and simmer, covered, until rice is tender, about 20 minutes. Let stand 5 minutes before serving.
