7 C. chicken broth

1 medium onion,diced

2 carrots, peeled and diced

1/2 bell pepper, seeded and diced

1 potato, peeled and diced

1/4 C. tomato paste

1 bay leaf

2 cloves garlic, peeled and chopped

1 tsp. drived Mexican oregano

salt and pepper to taste

2 boneless, skinless chicken breasts, poached and shredded

1 zucchini,diced

2 tomatoes, diced

1 can corn (optional)

1 1/2 C. shredded Jack cheese (or pepper jack)

8-10 slices avocado

cilantro sprigs

tortilla chips

Directions:
Directions:
Combine first 10 ingredients, bring to boil.

Lower heat and simmer 25 minutes.

Add chicken, zucchini, tomatoes and corn. Bring to boil and simmer an additional 10 minutes; remove from heat.

To serve soup, divide tortilla chips between bowls, add shredded cheese and ladle in soup. Top with slice of avocado and cilantro sprigs.
