Ingredients:  
cup peanut oil
cup green onion - sliced
1 clove minced garlic
1 can of mushrooms or cup fresh sliced
1 cup cooked chicken
3 cups cooked rice (cold)
cup frozen peas and carrots
2 eggs- slightly beaten
2 tsp. soy sauce
1 packet fried rice seasoning mix

Directions:
Directions:
-Preheat oil in skillet or wok. -Add onion, celery, garlic and mushrooms, stir fry for 2 minutes. -Add rice, chicken and peas and heat through, constantly stirring. -Push to side and add eggs. -Scramble eggs on side until done. -Add soy sauce and seasoning packet. -Stir all together until well coated with seasoning.
