Topping:
3 8-ounce packages cream cheese
1 pint sour cream
1 cup sugar
3 tablespoons sugar
3 eggs
1/2 teaspoon vanilla
3/4 teaspoon vanilla

3 graham cracker crusts

Directions:
Directions:
Beat cream cheese in a medium bowl until creamy. Add sugar gradually. Add eggs one at a time, mixing in each egg, and then add the vanilla. Pour into the 3 crusts. Fill 1/2 inch from the top of the crust. Bake at 300 for 1 hour; don't allow the cheesecake to crack. The center will still jiggle when you pull it out. While the cheesecake is baking whip the sour cream and gradually add sugar. Then add the vanilla. After cheesecake has been baking for 1 hour, pour topping over the hot pies. Return to the oven for 10 minutes. Let cool and enjoy. Cheesecake is best if made the day before.
