2 cups sifted flour
1 Tbl sugar
4 tsp baking powder
1 tsp salt
2 well beaten egg yolks
2 cups milk + tsp vanilla (To make 2 cups total)
2 Tbl butter, melted
1 cup finely chopped pineapple (Drain well)
2 stiffly beaten egg white

Directions:
Directions:
Shift together dry ingredients. Combine egg yolks and milk. Pour into dry ingredients; stir well. Stir in pineapple and butter. Fold in egg whites, leaving a few fluffs. Let batter stand a few minutes. Bake on hot griddle using 1/3 cup batter for each. Use a spatula to spread batter evenly. Dot with butter, and sprinkle with confectioners sugar, roll up. Makes 12.
