1 medium to large acorn squash
1 1/2 cups of bread crumbs
1/3 cup of brown sugar
2 tbsp margarine (melted)

Cut squash in half top to bottom and clean out seeds and fibers. Rinse well. Prepare a large shallow sauce pan that can hold squash side by side with 1 inch of water in bottom. Mix bread crumbs and brown sugar, spoon mix into the clean cavities. place in sauce pan with water (skin side down, cavity side up). spoon 1/2 tbsp marg on each squash in center of stuffing mix. Bake in 350º oven until done (45-60 min).

This is another vegetarian dish I like...you'll notice they all seem to have sugar in them (sigh). Luckily I'm not diabetic, but if you are, try using a little sugar substitute and a tbsp of maple syrup with the bread crumbs instead. Very tasty way to eat Acorn squash!! and a Pretty and colorful dish for the holiday table. Enjoy!
