Ingredients: 1 Cup grated apple 1 cup grated potato 1/2 cup grated carrot 1 cup flour 1 cup brown sugar 1 tsp soda 3/4 tsp salt 1 tsp nutmeg 1 tsp cinnamon 2 cups raisin 1/2 cup melted butter

Directions:Grease mold or soufflé dish liberally. Scatter a little granulated sugar in the mold to help make you pudding release from the pan. Mix all wet ingredients together. Mix dry together, then add to wet. Pour into prepared pan. Cover pan with lid or with foil. Place the pudding in a deep baking pan and pour boiling water up to about half way up the mold. Bake for one hour at 350 degrees. Serve with rum sauce. (See Aunt Vickie’s rum sauce with her Cranberry pudding cake.) |

Notes: John has been talking about this pudding for years. When we brought over a bunch of Shirley's recipe boxes, he spent about 2 hours searching for this recipe. We found it on the back of an old envelope . Aren't you all glad we have this book, so we don't need to search out the envelopes with old family favorites on them?
