8-12 skinless chicken pieces(we like to use thighs)
1 jar HoiSin sauce ("ChinaBowl" is best if avail)
save the jar for measuring other sauce ingredients
1 bunch green onions (sliced)
4 cloves garlic chopped (use more per your tastes)
1 jalapeņo pepper chopped thin
6 fresh mushrooms sliced
1/4 cup of fresh ginger root (shredded)
1 tsp sea salt, 1 tbsp sugar
(here's where you use that jar again)
1/2 hoi sin jar of Soy Sauce
2/3 hoi sin jar of cooking sherry

Combine liquids and spice ingredients to make the marinate. Submerge chicken in marinate and set in fridge covered for 12-24 hours. The longer it marinates, the more flavors it takes on. Prepare med hot grill and BBQ the chicken, basting with the sauce remains the first few turns but not the last two, as the sauce has to fully cook on the chicken. Grill till nicely browned, or even lightly singe them if your a grill fan. Serve with a nice jasmine rice or risotto and some fresh greens for a great light meal. YUM!
