4 1/2 lbs. potatoes (diced and peeled)
2 lbs. flour (approximately 5-5 1/2 cups)
2 eggs
2 tsp. baking powder

Directions:
Directions:
Cook potatoes. Don't overcook. Mash and let cool. Add flour, baking powder and eggs. Knead until a smooth manageable dough is obtained. If necessary, add more flour.

Roll dough into long rope-like strips about 3/4" thick. Cut into 3/4" long pieces. Dip in flour. Use prong of fork or roll with fingers to make a dented design in each piece.

Boil in 8 qts. of rapidly boiling salted water for about 10 minutes. Drain. Mix with spaghetti sauce, sprinkle with Parmesan cheese and serve.
