2-1/2 pounds potatoes
9 medium carrots (peeled and sliced)
1-1/2 cups sliced onion
2-1/2 cups boiling water
1 teaspoon salt
Bread crumbs

Cheese Sauce:
3 tablespoons butter or margarine
2 tablespoons flour
1 teaspoon salt
1/2 teaspoon pepper
1-1/2 cups milk
1-1/2 cups shredded cheddar cheese (divided)

Directions:
Directions:
In large pan cook potatoes, carrots and onions in water and salt. Bring to boil and reduce heat, cover and cook 10 minutes.

Sauce: Melt butter. Stir in flour, salt, pepper and milk. Bring to boil on medium heat, stirring constantly. Cook and stir 2 minutes. Add 2 cups of cheese; stir until melted.

In 9x13-inch pan layer half of vegetables, then sauce. Repeat layers. Sprinkle with cheese and bread crumbs. Cover and bake at 375 degrees for 20 minutes. Uncover and bake 10 more minutes.
