2 cups sugar
1/2 cup vegetable oil
3 large eggs
2 cups flour
2 tsp cinnamon
1 tsp baking soda
1/4 tsp nutmeg
3 cups diced Granny Smith apples
1/2 cup chopped walnuts or pecans plus some to sprinkle on top
2/3 cup caramel sauce

Directions:

Preheat oven to 350º.

In a mixing bowl, beat sugar, oil and eggs. In another bowl, mix flour, baking soda, and nutmeg together. Fold flour mixture into the sugar mixture just until blended (will be thick). Fold in apples and nuts.

Spread batter into a greased 9 x 13 baking pan. Bake at 350º for 55 minutes or until a toothpick comes out clean (top will be kind of crunchy).

Let cool. Heat the caramel sauce in microwave. Spread caramel sauce on top and then sprinkle on the extra chopped nuts.

Great recipe for fall, it’s even low in fat if you use fat-free caramel topping. So get your L.L. Bean apple peeler out and give it a try.
