MEAT:
Make Rub –
2 TB. Brown sugar
1 ½ tsp cayenne pepper
2 tsp cumin
1 tsp salt

Marinade:
1 can coke/Dr. Pepper
½ cup chicken broth
2 cloves garlic, minced
1 small onion, chopped
1 cup brown sugar

PICO DE GALLO:
3 diced tomatoes
½ onion, chopped
1/8 cup chopped fresh cilantro
1-3 chopped fresh jalapenos
pinch of garlic powder
salt, to taste
¼ cup water.

DRESSING:
2 avocados
8 oz ranch dip
1 small can tomatillos with the juice
1/8 cup fresh cilantro
1 TB olive oil
½ tsp rosemary
½ tsp dill
salt & pepper, to taste


Directions:
Directions:
Mix rub together, and rub into the pork roast. Place meat in crock pot with 1 cup water the night before. Cook on low all night. Drain, and add marinade. Stir well and cook on low for 1 hour.

Chill pico de gallo.

Blend dressing ingredients together in blender.

Warm tortillas, black beans.

Serve with shredded cheese, & sour cream.
