5# potatoes, peeled and shredded
1 ½ cup chopped onions
2/3 cup melted butter
13 oz. Evaporated mild
1 ½ c. shredded cheddar cheese
4 eggs
2-½ teaspoon salt
¼ tsp pepper
¼ cup minced parsley

Directions:
Directions:
Sauté the onions in butter. Add milk, bring to boil and remove from heat. Combine eggs, salt and pepper. Add shredded potatoes; mix well. Add Parsley, 1 c. cheese and milk mixture. Place into a 9x13” baking dish. Bake 1 hr in 350 degrees oven. Top with remaining cheese and bake another 30 minutes. Cut into squares to serve.
