2 large cherry tomatoes
4 slices medium zucchini, 1/4" thick
4 medium mushrooms
4 large pitted black olives
4 pieces green pepper, 1" pieces
2 frozen cod fillets, may also use haddock
1/4 cup Italian dressing
grated parmesan cheese

Directions:
Directions:
Alternate vegetables on each of two 9" metal skewers. Place frozen fillets on greased rack of broiler pan; brush with dressing. Broil 4 to 5 inches from heat for 4 minutes. Brush with dressing; carefully turn over. Place kabobs on rack. Brush fillets and kabobs with dressing. Broil 3 minutes; turn kabobs and brush both fillets and kabobs with dressing. Broil until fillets flake easily with fork, 2 to 3 minutes longer. To serve, brush fillets with dressing and sprinkle with cheese.
