5 yellow squash
Crumbled cooked bacon
1 minced small onion
1 minced green pepper
2 tablespoons butter
salt and pepper to taste

Directions:

Parboil squash and cut in half length wise. Scoop out center and puree. Add bacon, onion, green pepper, butter, salt and pepper. Fill this mixture back into the squash shells and top with bread crumbs. Place on baking sheet and bake for 20 minutes at 375º.

I buy the already cooked bacon in the package and use about 3 or 4 tablespoons.
