1 cup butter
1 cup sugar
1 egg
2 cups flour
1/2 teaspoon slat
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1 teaspoon vanilla extract
1 teaspoon grated lemon peel

Directions:
Directions:
1. Preheat oven to 400 degrees

2. In large bowl of electric mixer, at medium speed, cream butter with sugar and egg until very light and fluffy.

3. Sift flour with salt, baking soda and cream of tartar right into bowl. Beat at low speed until well combined; beat in vanilla and lemon peel.

4. Drop onto ungreased cookie sheets, using 1/3 cup for each cookie. With floured fingers, press cookies to flatten into 5 inch rounds. Repeat to form two or three cookies on a cookie sheet.

5. Bake 8 to 10 minutes, or until golden. Cool on wire rack. Sift confectioners' sugar over top, if desired.
