1-1/3 c. Vegetable oil
3 c. All Purpose Flour
1 T. ground cinnamon
1 tsp. baking soda
1 tsp. salt
2 c. sugar
3 large eggs
3-4 Granny Smith Apples cored and cut into 1/2" pieces (3 Cups)
1 c. chopped nuts -walnuts or pecans (optional)
1 tsp. vanilla extract
caramel sauce
ice cream

Preheat oven to 350 º. Spray a bundt pan with cooking spray. Working over large piece of parchment paper sift, flour, cinnamon, baking soda and salt. Gather into the center of the sheet and set aside. In the bowl of and electric mixer with a paddle attachment, combine vegetable oil, sugar, and eggs. Mix on high until batter is a lemon yellow color. With mixer on medium speed gradually shake dry ingredients into bowl until just incorporated. Add apples and nuts to batter mix to combine. Add vanilla extract and mix again.
Pour batter into bunt pan and cook for 75-90 min.
Cool slightly and then invert onto a rack to cool completely. Slice and top with caramel sauce and ice cream
