1 medium head lettuce or romaine ( 6 to 8 c.)
2 c. celery, sliced
l bunch spinach
4 green onions, sliced
2 cans (11 oz.) mandarin oranges
dash pepper

1/2 c. slivered almonds, carmelized
3 T. sugar (for carmelizing almonds)

2 T. red wine vinegar
1/4 c. sugar
1/2 c. vegetable oil

Toast almonds in oven. Saute almonds and sugar over low heat to carmelize stirring constantly. Cool on wax paper. Combine dressing ingredients and shake well before serving. Combine greens, onion and celery. When ready to serve, add oranges and cooled toasted almonds and dressing. (Mix dressing ingredients together.)
