Pancit - Rice Noodles with Chicken and Veggies Recipe

Rice noodles (sticks) or bean 2 grated carrots threads (can be found in Asian 1 cup frozen peas cooking section) Any other desired vegetables 2 cloves crushed garlic 1 Knorr chicken bouillon cube 1 medium onion sliced vertically 2 cups chicken broth 2 tablespoons oil Pepper to taste 2-3 cooked chicken breasts, Soy sauce to taste shredded
Soak rice noodles in hot water for 15 minutes. Saute garlic and onion in oil until onion is clear. Add chicken and all other ingredients. Adjust flavor and then add the rice noodles. Heat through and serve with soy sauce on the side.
This is a traditional Philippine dish that I learned from a Philippine lady I met on my mission.
