1 small onion
1 cup celery
1 stick butter
2 cups chicken broth
1 pint half & half
4 medium potatoes
1/4 cup flour
salt & pepper to taste

Directions:
Directions:
Finely mince onion and celery. Saute in butter until soft. Peel and dice potatoes. Combine potatoes, celery, onion, butter and chicken broth in a large sauce pan. Simmer until tender, apr. 15 mins. Mix 1/2 cup half & half with flour until smooth and stir into soup to thicken. Add remaining half & half and salt and pepper. Simmer 10 mins., being careful not to let stick. When ready to serve, garnish with grated cheese, crumbled bacon and chives if desired.
