6 peppers.....red,yellow, & green,quartered,
6 red onions,
8 garlic cloves, peeled
1/4 c. olive oil
1/4 tsp. salt,
1/8 tsp. F/G pepper,
1 T. lemon joice,
1 T. each: parsley, basil, chopped fine,

Directions:
Directions:
Place peppers, red onions,, and garlic in 9x13 Pyrex dish. Toss with olive oil,salt,pepper.
Bake @ 400º for 1 hour 20 minutes, tossing every 20 minutes.
Before serving, sprinkle with lemon juice,parsley & basil.
Serve with crackers as appetizer or as a side dish.
