1 lg. butternut squash pared, cut into 1 inch cubes (remove seeds and fibers)
1/4 teaspoon cinnamon, 1/4 teaspoon nutmeg
1/3 cup brown sugar, 1/3 cup butter, melted
2 teaspoons lemon juice (fresh is best)

Directions:
Directions:
Place squash cubes in a 2 quart casserole or baking dish. Sprinkle with spices and brown sugar. Drizzle with melted butter and lemon juice. Bake uncovered in 375 degree oven for 45 minutes or until tender. You can add bread cubes dusted with brown sugar on top and baked till brown for a crunchy alternative topping.

Terri and I often take a break from Meaty meals and go Vegetarian every now and then. One of my Favorites as a main Veggie Entree is this Baked Sweet Butternut squash recipe. If you've had plain ol' baked butternut and hated it, give this sweet and delectable vegetable dish a try and improve your Vege-cabulary! Yum!
