2 ducks cooked, boned, and cut-up; save 1 1/2 cup broth. (I cook duck in large pot with 2 cans chicken with rice soup and 1 can beer).
1/2 c. margarine
1/2 c. onion, diced
1/2 c. celery, diced
1/4 c. flour
6 oz can sliced mushrooms, drained
1 pkg. Uncle Ben's wild & long grain rice, cooked as directed
1 1/2 c. cream or half and half
1/2 tsp. salt
1/4 tsp. pepper

Directions:
Preheat oven to 350. Saute onions and celery in the margarine. Stir in flour, mushrooms, and broth. Add rice, duck, cream, salt, and pepper. Pour into a 2 quart dish and bake for 25 mins.
