4 large baked potatoes,
2/3cup butter,
2/3cup all purpose flour,
6c milk (I use more),
3/4tsp salt,
1/2tsp pepper,
4 green onions chopped,
12 slices of bacon, cooked and crumbled
(I have used real bacon bits purchased @ store),
1 1/4c shredded Cheddar cheese,
8oz sour cheese

Wash potatoes and prick with fork, bake at 400º for 1 hour (or bake in microwave til soft). Let cool. Cut potatoes in halves lengthwise, scoop out pulp and set aside. Discard skins. Melt butter in heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until mixture is thickened and bubbly. Add potato pulp, salt, pepper, 2 tablespoons green onions, 1/2 cup bacon, and 1 cup cheese. Cook until thoroughly heated; stir in sour cream. Add extra milk if necessary, for desired thickness. Serve with remaining onion, bacon and cheese.
