1 lb already cleaned calamari with tentacles (tubes cut into 1/4 to 1/2 inch rings)
1 cup milk, 2 eggs, 2 cups flour
1 cup yellow corn meal, 2 tsp paprika
1 tsp course ground pepper, 1 cup light mayo
vegetable oil for deep frying
1 T minced chipotle pepper in adobo sauce

Directions:

Dip each piece of raw calamari in a cup of milk beaten with a couple of eggs. Dredge in mixture of flour, corn meal, paprika & course ground pepper. Once coated; deep fry in vegetable oil in approximately 3-4 batches for 2-3 minutes until light golden brown. For dipping sauce mix chipotle with mayo.

Believe it or not. Kids love this. The tentacles tap right in to their inquisitive need for discovery and adventure. Exotic, a bit of spice, and great taste teams this appetizer up with any meal. When Mom and Dad visit, and this dish is served; Dalton lovingly comments " I'm sitting next to nano so I can eat his calamari too." This is the stamp of approval we love to hear from children.
