1 beef tenderloin
Salt and pepper
1 T. olive oil
1 1/2 cups thinly sliced mushrooms
2 T. minced shallots
1/2 cup red wine
1/2 cup beef stock
2 T. butter
1 T. parsley

Directions:
Directions:
Sprinkle meat with salt and pepper. Rub with olive oil. Roast, uncovered, in a 450º oven to desired doneness (about 1 hour for medium rare). Transfer meat to warm platter. Place pan on stove and add wine to deglaze the pan. Add shallots, mushrooms and beef stock. Cook until mushrooms are done (about 5 minutes). Swirl in butter and parsley. Slice beef and pour sauce over slices.
