2 c. grated carrots
1/2 c. nuts
2 1/4 c. flour
1 tsp. salt
2 tsp. baking powder
1 tsp baking soda
2 c. sugar
2 tsp. cinnamon
1 c. oil
3 eggs
2 tsp. vanilla
1 small can (drained) crushed pineapple

Directions:
Directions:
Beat oil and eggs. Add pineapple and carrots. Add vanilla. Sift dry ingredients together and add to egg and sugar mixture.

Bake at 350º for 30 to 40 minutes in a greased 9x13-inch pan.

CREAM CHEESE FROSTING:
Mix the following ingredients -
4 oz. cream cheese
2 tsp. vanilla
1/2 cube butter
2 c. powdered sugar
(Add milk as needed to make desired consistency for spreading)
