4 tbsps. extra virgin olive oil
1 lb. sweet or hot Italian sausage, cut into 1/2 inch slices
1/2 cup red wine
1 lb. mushrooms, sliced 1/4 inch thick
2 1/2 cups drained, canned San Marzano tomatoes, crushed
Salt and freshly ground black pepper

In a large, heavy skillet heat the olive oil over medium-high heat. Add the sausage, brown lightly, about 10 minutes. Add the wine, mushrooms and tomatoes, season with salt and pepper. Simmer until somewhat reduced, about 30 to 40 minutes. I like to cook mine even longer.
