2 2/3 c. flaked coconut
1 3/4 c. powered sugar
1/3 c. cooled mashed potatoes
1 (12 oz.) package of chocolate chips or chocolate almond bark

Directions:
Directions:
Whip potatoes well with no milk. Combine coconut, powered sugar, and add whipped potatoes. Mix well, shape into small balls. Freeze candy before dipping. Melt chocolate chips, or I have used chocolate almond bark the last years, in the microwave oven, or over boiling water. Dip balls and put on buttered cookie sheet to cool.

The first year we were married Steve saw me making these, he said they were disgusting, and wouldn't touch them. The next year I made them again, he didn't see me making them, and they became a favorite that year. I don't bake much at Christmas anymore, but this is the first thing my boys always request.
