2 c. chicken broth
2 T. butter or margarine
3 T. minced onion
1 c. arborio rice
1/3 c. dry white wine
1 c. water
1/2 c. grated Parmesan cheese

Directions:
Directions:
Heat broth in a small saucepan and keep heated. In a large saucepan, melt the butter and saute the onion over medium heat until transparent. Stir rice in until well coated. Add wine and stir until completely absorbed. Then add enough broth to cover rice and stir until absorbed. Repeat with rest of broth and water until rice is done--tender but al dente (about 20 minutes). Remove from heat and stir in cheese, salt to taste. Serve immediately.
