8 oz salmon Fillet
frozen spinach 2 packages
garlic 1 clove
Onion 1 small
Bacon 5 slices
lemon 1
mozzarella one small bag
Salt and pepper

Directions:
Directions:
Fry up 5 pieces of bacon and dice up then set aside. Sauté one medium onion and set aside. In a frying pan, add 2 pkgs of spinach and thaw out on medium heat. When spinach thaws out and starts to come to a boil, pull off stove and drain out excess water.
Turn stove to medium high heat and add your garlic,spinach, onion, bacon, and salt and pepper to taste.Sauté for 3 minutes , add your cheese and turn off stove.

Preheat oven to 350 degree, add the salmon filet. Let cook for 20 minutes.

To plate, add salmon then top with the spinach mixture. Serve with a side of rice.

I make this before I plan a long fishing trip , or if I am in trouble with momma. Either way this is a guaranteed " get out of jail card "
