Combine the scalded milk, shortening and salt. Let cool.
In a small bowl combine 1 C of warm water, yeast and 1 T
sugar. Stir and let set about 15 minutes until you can see the
yeast is working.
In a large bowl combine the yeast mixture and milk and then
add the eggs, sugar, rye flour, wheat flour, and 2 C white flour
and beat together. gradually work in remaining 3 C of white
flour. Knead dough until smooth and shiny. Let rise until
doubled in bulk. Shape into 2 loaves, let rise and bake for 25
minutes at 350º
