1 pound boneless, skinless chicken thighs
2 cans condensed cream of potato soup
1/2 cup uncooked wild rice
1/4 cup frozen chopped onions
1 can (14 oz) chicken broth
1 garlic clove, crushed
2 cups sliced carrots
1 cup of half and half

Directions:
Directions:
Place chicken in crock pot. Mix wild rice, onions, soup, broth, garlic and carrots; pour over chicken. Cover and cook on low heat setting for 7-8 hours or until chicken is fully cooked. Remove chicken, dice and return to crock pot. Stir in half and half. Cover and cook on high heat for 15 to 30 minutes or until hot.

Makes 8 servings.

For a lighter soup replace the half and half with skim milk. Tom likes it without the half and half. It is more like a wild rice hotdish without the half and half.
