1/2 stick butter
1 lb. (2 cups) cut up yellow squash
1 medium onion, chopped
1 egg, beaten
1/2 cup milk
1 cup shredded cheese
6 or more crushed Ritz crackers
salt and pepper to taste

Directions:
Directions:
Cook squash, butter and onion (add enough water to just cover squash) until tender. Save enough liquid from squash to add to milk to make 1 cup. Mash squash and then add milk mixture, egg, crackers, cheese, salt and pepper. Pour into a casserole dish. Top with additional crackers. Bake at 350 degrees for 30 minutes.
