4 8-inch wheat tortillas 1/2 c. feta cheese 2 c. baby spinach 2 tbsp. pine nuts toasted 1 tsp. lemon juice pinch of garlic salt and freshly ground black pepper
Layer two tortillas with cheese, spinach, pine nuts, lemon juice, garlic salt and pepper. Top with remaining tortillas; press firmly. Coat large non-stick skillet with butter-flavored cooking spray and heat on medium heat.
