Pepper Jack Meatloaf Recipe

1 lb. hamburger
1 egg
1 cup seasoned bread crumbs
1/4 cup chopped onion
1 tsp. salt
1/2 tsp. pepper
1 cup shredded pepper jack cheese (I use more)

Directions:
Directions:
In large bowl, combine egg, bread crumbs, onion, salt, and pepper. Crumble meat over mixture and mix well. Press 1/2 mixture into loaf pan. Sprinkle 3/4 cup cheese over meat mixture. Pat remaining meat mixture over cheese. Bake uncovered for 350 degrees for 40 minutes (160 degrees). Sprinkle cheese over meatloaf and bake for 5 minutes more.
