2 Beaten Eggs
1 C Cornstarch
¼ C Milk
1 C Sugar
¼ C Vinegar
¼ C Soy sauce
¼ C Ketchup
2 TBSP Crushed pineapple
2 TBSP Pineapple juice
2 pounds boneless/skinless chicken

Directions:
Directions:
Mix together the eggs, cornstarch & milk for the batter. Set aside.

Mix together sugar, vinegar, ketchup, pineapple & juice in a small saucepan. Boil until it thickens a smidge. Set aside.

Cut chicken into bite sized pieces. Dip into batter & fry in hot oil on the stovetop until golden brown. Remove from oil onto a paper towel lined plate to soak some of the oil off. Then dip chicken in the sauce & put it into a glass baking dish. Bake @ 350 for 15 minutes. Turn & baste with remaining sauce. Bake an additional 15 minutes.

**I usually make this in two 9x13 pans & it fills them both loosely packed.
Also, it’s easiest to do each step completely then move to the next.
