3 Eggs
1 cup Oil
2 cups Sugar
2 tsp. Vanilla
1 cup Crushed Pineapple (well drained)
2 cups Shredded Peeled Zucchini
3 cups Un-sifted flour
2 tsp. Soda
1/2 tsp. Baking Powder
3/4 tsp. Nutmeg
1 tsp. Salt
1/2 tsp. Cinnamon
1 cup Chopped Nuts
1 cup Raisins

Beat eggs with mixer until foamy. Add oil, sugar, and vanilla together and beat with eggs until thick and foamy. Stir in the pineapple and zucchini. Stir in all the rest of the ingredients until well blended. Fill 2 - 5X9 greased and floured loaf pans. Bake at 350 for 1 hour or until pick inserted in center comes out clean.
