1 lb. split peas 1 ham bone 1 c. diced celery 1 c. diced carrots 1/2 c. diced onion 1 t. salt 1/2 t. pepper
Cover peas with 2 quarts water and bring to simmer. Turn heat off. Cover and let stand 1 hour. Add ham bone, onion, salt and pepper. Cover pot and bring to boil. Reduce to simmer immediately. Cook 2 hours. Add celery and carrots and simmer 40 minutes.
