1/2C. butter

1 twist coil vermicelli

1 1/2C. long grain white rice

3C. chicken broth

1C. fresh mushrooms, sliced

1/2 medium onion, grated

1/2tsp. salt

1/2tsp. pepper

Directions:
Directions:
Melt butter in a saucepan. Break vermicelli into very small pieces. Add to butter and saute over medium heat, stirring often until golden brown.

Add rice, broth, mushrooms, onion, salt and pepper. Bring to a boil. Reduce heat and simmer, covered about 20 minutes.

If made ahead place in a covered casserole in a 300 oven for 15-20 minutes to reheat.
