1 lb. breakfast sausage or sliced chorizo
1 small bag frozen hash browns (about 1 lb.)
4 eggs, beaten with milk or water
grated cheese
ketchup (with breakfast sausage) or salsa (with chorizo)

Directions:
Directions:
Burn campfire until coals develop. Heat dutch oven over a few coals, or use the stove top if you like. Cook sausage. Remove from pan. Brown hash browns in sausage drippings in bottom of pan. Place sausage over hash browns. Pour eggs over sausage and sprinkle with cheese. Cover dutch oven and bake for 20-25 minutes until eggs are cooked, either in conventional oven at 350 degrees or using coals on top and bottom of dutch oven. Serve with ketchup or salsa.

This hearty breakfast will keep you going until dinner! If you use a turkey sausage, you may need a little additional oil to cook it in.
