¼ cup sliced onion
2 tablespoons shortening
2 tablespoons flour
½ teaspoon salt
⅛ teaspoon pepper
1 can (1 lb.) tomatoes (2cups)
½ lb. bologna, cubed (2 cups)
¾ cup diced carrots, cooked drained

Directions:
Directions:
Heat oven to 425°. Cook and stir onion in hot shortening until tender. Remove from heat. Blend flour, salt, and pepper. Cook over low heat, stirring until mixture is bubbly. Remove from heat. Stir in tomatoes. Heat to boiling, stirring constantly. Boil 1 minute. Add bologna, carrots, and beans; return to boiling. Pour into square pan, 8x8x2’. Place in oven to keep hot while making bologna Biscuits. Drop 8 or 9 tablespoonfuls of biscuit dough on hot mixture. Bake 25 to 30 minutes or until biscuits are lightly browned. 5 servings.
