5 c. vegetable stock or 5 beef cubes with 5 c. hot water
1 slice bread
1 tbsp. butter
1/4 c. minced onion
1-1/2 lb. ground meat
2 eggs, beaten well
3 tbsp. chopped parsley
1-1/4 tsp. salt
1/4 tsp. paprika
1/2 tsp. grated lemon rind
1 tsp. lemon juice
1 tsp. Worcestershire sauce

Directions:
Directions:
Place vegetable stock (or beef cubes & water) in stockpot and bring to a boil. Soak slice of bread in 1" of water. Melt butter in skillet; add onions & sauté. Wring water from bread and add to meat. Add remaining ingredients and mix well. Shape lightly into 2" balls and drop into boiling vegetable stock. Simmer covered for 15 minutes.
