Ingredients:  
1 Tbsp vegetable oil
4 boneless, skinless chicken breast halves
1/4 tsp @ salt & pepper
1 can (8.5oz) cream of coconut
1/2 cup whipping cream
1 can (8 oz) pineapple tidbits, drained
10 maraschino cherries, cut in half
1/4 cup sweetened flaked coconut, toasted

Directions:
Directions:
In large skillet, heat oil over medium heat
Season chicken with salt & pepper and saute' for 3-4 minutes per side or until no pink remains and the juices run clear
Remove to a platter and cover to keep warm
Add cream of coconut and whipping cream to the skillet
Cook and stir for 1-2 minutes, or until well combined
Stir in pineapple and cherries and return the chicken to the skillet
Cook for 2-4 minutes, or until heated through
Sprinkle with toasted coconut and serve
