16 oz. can black beans, rinsed and drained
2 large tomatoes, diced
1 cucumber
1 medium onion
corn, as much as desired
cilantro, fresh
cumin power
juice of 2 limes
red wine vinegar (approx. 1/4 cup)
2 tbsp olive oil
salt and pepper, to taste

Directions:
Directions:
Combine the rinsed and drained black beans with the corn. Dice the tomatoes, cucumber, and onion. Add to the black beans and corn mixture. In a small bowl, whisk together the red wine vinegar, olive oil, lime juice, salt and pepper, and add a dash of cumin powder. Pour this mixture over the mixed veggies. Add the fresh cilantro, and then add more cumin powder, to desired amount.

This is a very simple summer recipe, for when the garden is full of fresh veggies. Be creative with this one. Add whatever you like! Make it into a main course by adding shredded chicken.
