Nana's Potato Patties Recipe

3 lbs Red Potatos (peeled & diced)
1/2 cup onions ( finely chopped)
2 cloves of Garlic
1/4 cup Parsley
1/4 cup Green Onions (Shallot)

Egg Wash
2 Eggs
1 1/2 milk
2 cups flour

Directions:
Directions:
Boil potatoes until tender. Drain & mash while hot. Then mix in all other ingredients. Season to taste with salt, red pepper and black pepper. Make into patties while potatoes are still hot (very important!). Let potato patties cool in refrigrator

Make egg wash. Beat eggs with milk. Pass patties into flour first and then into egg wash and then back into flour. Pat off excess flour.

Deep fry in peanut oil that has been heated to 350º. Fry until golden brown.
